Wine Pairing Opportunities
Zinfandel
Great with: Carnitas tacos, adobo pork, mole poblano. Juicy fruit balances spice and chili heat Works with smoky and slightly sweet sauces. Lodi Zinfandel often has a soft tannin profile that won’t clash with heat.
Syrah
Great with: Carne asada, grilled meats, chorizo. Peppery and savory — mirrors spices in grilled beef. Moderate tannins handle fat and charred flavors. Lower alcohol or cool-climate styles if spice is high.
Merlot
Great with: Chicken mole, taco salad, cheesy enchiladas. Soft tannins and round fruit complement tomato-based sauces and melty cheeses. Especially good if the Merlot is lower in oak and ABV.
